  Located in the heart of the famous village of Espelette
  The AOP Ossau-Iraty Interpretation Center welcomes you from Easter to All Saints' Day. By visiting it, you will have all the keys to understand the specificities of the emblematic cheese of the gastronomy of Béarn and the Basque Country: the AOP Ossau-Iraty.
  
  A lively place for adults and children
  Which offers a fun and informative visit. You learn to recognize the 3 breeds of local sheep that give the milk used to make Ossau-Iraty and the richness of the local flora, to fully understand all the stages of production and a film immerses you in the daily life of the shepherds.
  
  Meetings with producers
  Regularly, producers welcome you there. They explain their jobs to you and share their passion. They invite you to tastings and offer their cheeses for sale. A great way to discover all the taste variety of the AOP Ossau-Iraty.
  
  On site, remember to ask for the Ossau-Iraty Cheese Route guide. 129 stages spread over Béarn and the Basque Country to meet producers and cheese dairies.
  
  Open from Easter to All Saints Monday to Friday from 10 a.m. to 1 p.m. and from 2 p.m. to 6 p.m. It can be open at other times on request. Phone 05 59 37 86 61 for all information.

Interesting place to learn more deeply about how Ossau Iraty DO cheese is made. During the summer months, we found different local shepherds offering tastings of their cheese.

The cheese is excellent when bought and tasted on site. Unfortunately, on your advice we bought in larger quantities and froze when they arrived. The cheese has completely changed flavor and texture.
