After demonstrating his agility on the rugby pitches within the famous Aviron Bayonnais team while continuing his studies at the hotel school, Jean-Baptiste Barbace or "Battite" for close friends , will surpass himself in the kitchen.
As he continued his rugby career at Biarritz Olympique, he met Serge Blanco who offered to leave him the keys to the kitchen of his Ibaïa restaurant within from the hotel of the same name in Hendaye, on the Basque Coast.
A few years later, he joined his father in the kitchen of the Argia hotel and took his marks. After some time, he takes it alone, the reins and constitutes his brigade.
Here the watchword remains respect for the product, preferably local.
You can enjoy tasty and generous dishes for lunch and dinner. You can be tempted by the squid a la plancha, the monkfish, the duck breast or grilled meat.
Without forgetting the salads : composed, caesar, gourmet... But with all this we must not forget to save a place for a little sweetness like the red berry panacotta.
