Hmmm Basque gastronomy! Sunny flavors, which make the taste buds sing and have a delicious little holiday taste... In the Basque Country, we eat well and it is thanks to the breeders, growers and producers who carefully select local products, to invite to your table. We present to you the Basque specialties of Etxe Peio, producer and processor in his workshop in Espelette. On the occasion of the award of the Artisans Gourmands appellation to this traditional cannery which employs 50 people, we tasted their products, but only to tell you more about them... :)

Basque gastronomy, inseparable from this region of character

Basque specialties are like the territory that gave them birth: they have character, taste, flavors that are present and immediately identifiable for gourmets who love them. Meats exceptional, fondant hams, with powerful aromas and delicate on the palate, casseroles composed of tender meat, finely statements Espelette pepper (the real taste signing of the Basque Country), peppers of all colors, fish specialties or of meats (pork, duck, goose) in preserves or jars, to be opened for special occasions. Founded in 2008, Etxe Peio is now around fifteen shops (in french), 80% stocked with products made by the brand, in its workshop in Espelette. It is for this reason that the prestigious designation of Gourmet Artisans has been awarded to them. She just devote their willingness to innovate while having respect for tradition (in revenue and the implementation thereof), transmit their skills and offer quality local service.

A meal of Basque specialties

To bring back a little of the Basque Country in your suitcases, to concoct a meal with flavors from here, but over there, at home: push the door of one of the Etxe Peio shops.

For a beautiful holiday table, a meal with friends, Basque dishes have an undeniable convivial character. Festive, they can be eaten without fuss and are appreciated by everyone, including children. Espelette pepper, which is used in several specialties in jars, canned food, pâtés, terrines, foie gras and also stews, is very sweet! It is said to be the pepper from the Basque Country and it has largely replaced the classic pepper when the importation of this one was too expensive, giving its note so floral and particular to the traditional Basque recipes.

In Etxe Peio shops, you can also find wine from the Basque Country, craft beers, liqueurs and other aperitifs to enjoy before a meal or as a digestif. Place one of the tender sausages matured for 4 weeks in the Espelette dryer in your basket. Etxe Peio is attentive to consumers' feedback, so when they were advised to increase the ripening period to multiply the flavors, they followed this good advice, with the desire to bring the best of quality to their customers.

Member of the Pepper Union, Etxe Peio has mastery of the taste of its preparations, being responsible for the entire production chain : from the choice of live animals to the setting in jars and sterilization, including the preparation of recipes, seasoning etc. Everything is important to implement consistent quality and good taste, always there.

Customizable boxes to offer the taste of the Basque Country

For the holidays, a birthday, a special occasion or just to have fun, consider the Etxe Peio gift boxes. In the store or on the Etxe Peio website (in frnech), you can choose assortments prepared in advance (trust their expertise) or compose a basket of delicacies yourself. Let your imagination run wild! Make a tapas platter as a starter, spread toast with country pâtés, blood sausages and other flavored charcuterie specialties.
