Gorriak, a passionate brand for gourmets

The recipe is at the heart of the concerns of the 3 Chefs at the origin of this original project: Chef, Chef of the cannery and Chef of the ham dryer, they met together at the table of the Etchehandia restaurant in Espelette, to redo the world… And here they are creating a brand, a concentrate of their know-how, their best recipes and desires to share around Basque cuisine!

All Gorriak products are cooked in Espelette. 500m from the restaurant are the cannery and the ham dryer (the only ones in the village). The Chefs have put together a reasonable but very complete range for the launch of their new brand. Their common project is to make the high quality and know-how of their production more widely known. Because here in Espelette, it is artisanal production methods that are at work, inspired by authentic local traditions. The products used to make these recipes come from short circuits. For 50 years, the Conserverie has been working to create top-of-the-range recipes, so that each jar, each can open to the consumer, is as appetizing and gourmet as a homemade dish. Controlled cooking, just to the point so as not to denature the food, preserve its nutritional qualities, its texture and visual aspect, it is a guarantee of know-how!

The young brand Gorriak is launching accompanied by values and with the desire to limit its environmental impact as much as possible. The products are cooked and dried in Espelette, everything is prepared locally without dyes or preservatives for the preserves, the packaging chosen is 80% recyclable and reusable.

"The taste above all and above all", you will take full the taste buds and the peepers. Because the recipes and traditional dishes offered by Gorriak are as beautiful as they are good.

Who are these products for? For all those who want to bring a little bit of the Basque Country home, to put authenticity on their plate. The launch range, which will then expand, is divided into 4 product categories:

  • Preserves: local terrines, Basque pâté, ximista pâté (with chorizo spices), piquillo pâté (a delicious sweet Basque pepper), pâté with porcini mushrooms, xistorade (chorizo meat), Basque pudding (to spread!), pork chicks (to spread, it's creamy!), rillettes...
  • Cooked dishes from land and sea: specialty of Espelette, veal axoa (also in a version with pork), Basque-style piperade (with peppers), Basque garbure, Basque-style chicken and candied confit pork and sausages. Chipirons à la basquaise (or in ink), rillettes of sardines, tuna, mackerel with Espelette pepper…
  • Condiments: Espelette chilli powder, chilli puree, chilli salt, old-fashioned mustard, cider jelly and chilli jelly, xipister (vinegar sauce for grilling, also for deglazing), hot sauce, etc.
  • Salting: Ham from the Espelette dryer (15 months ripening), IGP Bayonne whole boneless ham (12 months ripening), ventrèche, sausage, chorizo, etc.
