Twelve years ago, Pierre Giudicelli de Mercury , then in his twenties, fell in love with taste . He is also a trader at heart, since he was little he loved the markets and started his professional life, selling good products on colorful and fragrant stalls. A few years later, his stall grew and he is now the creator and manager of the company EtxePeio (which means most simply in the world “ Chez Pierre ” in Basque).
These marvels of flavor can be found in around fifteen shops throughout the Basque Country and also in the Landes and recently in the Gironde . EtxePeio also thinks of holidaymakers in love with its products, who can then order them on the website from all over France, via the online store !

EtxePeio is a reseller of a few products, carefully selected for their quality and only locally manufactured , but all the canning part is managed by the company. All Basque preparations, preserves, jars, condiments and salting are made in Espelette .
Cyril Brunet , responsible for production and in the business for more than 13 years, showed us the impressive catalog of made-up products. They make Basque recipes, but also adaptations of traditional French recipes such as Cassoulet , Lentilles Saucisses , Garbure but always with a little Basque touch (often it's Espelette pepper!);) The recipes are traditional, they are executed with care by a team led with talent by Marc Viarouge , a chef who also has a taste for good things .

About a hundred preparations are made and the cannery only supplies the shops and sometimes a few baskets for business gifts , offered by EtxePeio. About fifteen people are in the kitchen, sometimes releasing 3 to 4 recipes a day! It is an average structure, which has the advantage of flexibility : if a product is missing from the catalog, it can quickly be put back on the shelves! They have the capacity to make volume while enjoying the flexibility of craftsmanship , the best!
The raw materials used are truly local : this is an important leitmotif for Cyril, who reminds us that working with live products also requires being attentive to seasonality : for vegetables of course, but also for meat. and the fish ! Because it is the taste, but also the texture that is directly impacted by the quality of the product . To guarantee optimalfreshness and conservation , a cannery must sterilize its containers: to avoid overcooking and harming the taste properties and visual rendering of the preparations, the EtxePeio cannery uses state-of-the-art and modern equipment . Mastery of cooking is what is at stake in the work of a cannery! The containers are filled by hand, to avoid shearing of the preparations and to guarantee homogeneity.

Here, when we prepare a new recipe , we taste first! If it's good, then we wonder how to share this good taste with customers and make it economically viable. We also wonder how to improve the classics : for example the truffle pâté. After tasting, they found that the taste of the truffle was masked by that of the pork, so the recipe was remade with more truffles and poultry liver! Result to taste in store ...

Do you know the Xistorade ? A spread with Basque chorizo. Cyril gave me a recipe… With diced good ham (Basque, we agree?), Brown an onion and dilute with crème fraîche (whole, please) and two good spoons de Xistorade… We simmer everything and we coat the pasta or potatoes with this Basque “ carbonara ”… Hmmmmmmmm a deliiiiiiiice !!!
