Unlike industrial beer, designed to appeal to as many people as possible, craft beer made by small producers is often original, distinctive, and full of character. It titillates the taste buds when tasting, and is readily accompanied by a sensory analysis and an appreciation specific to each. A search for pleasure that can go as far as revelation for consumers sensitive to the aspect of the land, local know-how, respect for manufacturing processes and ecology.

In the Basque Country, the production of craft beer is an activity that is experiencing an invigorating expansion and, the excellence of Basque microbreweries deserving to be celebrated, today we are going to discover a real tavern of modern times : the brewery craft from the Docks in Biarritz !

The Docks of Biarritz, a concentrate of craftsmanship and know-how  

The Docks of Biarritz is above all the meeting of craftsmen driven by a common desire : to discover the most beautiful taste treasures of the Basque Country. For gourmets, this is a special place bringing together around fifty shops, all activities combined, where know-how and passion are in the spotlight. The ideal place to visit Véronique and Jean-Philippe's microbrewery located at Dock de la Négresse and awaken your senses.  

From the doorstep of this former industrial building, which has been skillfully converted, the scent of boiling malt tickles the nostrils. Today is brewing and bottling day for the two partners behind the concept of the dockyard brewery.

A sparkling story

An idea, a desire, a hobby turned passion, a change of life for Véronique de Meeüs, whose name betrays the Belgian origins with deep-rooted brewing traditions. Before the opening of this unique place in July 2019, this former professional architect brewed her own beer experimentally in her garage, playing on the quality of cereals and malt, on the origin of the yeasts, the choice of hops and on the manufacturing technique. After a few years of work, reflection and learning, she decides to fully embark on the adventure with Jean-Philippe, supported by her friends resolutely seduced by the flavors of her beverages. A skill that is not easy to master : to brew well you have to have the soul of an alchemist. And when it comes to chemistry and magic, this team knows quite well !

An authentic beer, brewed by hand  

Made in front of your eyes, in the integrated microbrewery behind the counter, Docks beers are neither filtered nor pasteurized and contain no additives or preservatives. They thus retain all the subtlety of their aromas. The beers are entirely produced on site. In this unusual place, an old tile factory transformed into a brewery, each step is carried out with respect for the sake of quality : from the crushing of the grains to the bottling, including the brewing, the mashing, the boiling, the hopping and the start of fermentation by adding yeasts.

The result is a range of craft beers with character, available in 5 permanent beers between 5 and 6.5 °: Ma Blonde, a thirsty blonde, light and fruity, Mon Ambrée , woody, round and delicious, Ma Brune, aromatic and round like amber with a roasted black malt, Ma Blonche, with a touch of bitterness, a fresh white flavor with a blonde malt, Mon IPA, frankly bitter with citrus notes. Ephemeral beers are added to this to vary the pleasures over the seasons ! In 2020 for example, Christmas beer is produced during the holidays, a dark brown with flavors of tangerine, cinnamon and cloves !  

You will surely find the one that will delight your palate, whether light and fruity or on the contrary robust and powerful. A real taste of authenticity, appreciated by lovers of bubbles and hops !

For questions of ethics and respect for the environment, the two acolytes favor short circuits and independent resellers. In addition, the bottles are returnable and returned to the brewery to promote glass recycling (50 cents per bottle).

Beer making workshops

How about brewing your own beer ? According to Véronique who organizes initiation workshops in groups of 5 to 6 people, it is not more difficult than following a cooking recipe. Take part in the various stages of malting, filtration, fermentation and come back 3 weeks later to put your own beer in the bottle… The making of beer will hold no secrets for you !

Find the Bière des Docks to take away and taste at home (between 6°c and 12°c), before the friendly counter and the tasting area of the brewing site opens again to the public, according to government measures.
