If I had to sum up Basque cuisine, this establishment would be its very definition. It's almost like a farm inn; the menu is simple, the portions are generous, and the taste is extraordinary! Here, I rediscovered flavors I used to enjoy on Sunday afternoons with my grandmother. If you're in Espelette, you absolutely must make the detour to eat here, a world away from the tourist traps of the town center. Be warned, you must make a reservation! Thank you for this wonderful experience, and thank you for the warm welcome.
