Most of the ingredients used are local products , which ensures the freshness and quality of the dishes offered.

Thus, the lamb was raised on the family farm located behind the inn, the trout come from the village of Ahaxe (Truites d'Iraty) and the sheep's cheese is matured at the dairy cooperative of Saint-Jean-Pied- de-Port (Garaziko Gasna Etxea) .
