  We learned about these artisan cutlers thanks to a leaflet in our hotel (Maison Bonnet in Itxassou). My son and I, passionate about knives, went to visit the Bayonne store. A beautiful store, products... breathtaking...! Very beautiful knives, excellently made and above all local. We were welcomed and advised by a very friendly person. We couldn't leave without giving our son the Bixia model, a buffalo horn chili knife. ...to continue to spice up this discovery, we decided to visit the manufacturing workshop in Bidart. We witnessed the creation of these objects of art... and well... as an enthusiast too... I of course left with my Bixia red pepper knife model. As in Bayonne, the welcome there was just as friendly. For all connoisseurs, a visit is essential.

  Very disappointed, I am an amateur and passionate about knives, so without a priori when I went to Bidart. There, far too many knives, even in abundance. But everything seems the same. In series. And not a gram of wood or steel dust anywhere. No noises specific to any artisanal manufacture. You don't have to be a great cleric to guess that here, production is industrial. It seems to me that it is more of a place of commerce, and not a real artisanal production workshop. At most, a place for assembling spare parts that claim to be artisanal. A deception.
