Artisan cutlers in Bidart since 1987

In Bidart, in the heart of the Basque Country, the Basque Cutlers have been perpetuating a unique know-how for over 35 years. Founded in 1987 by Pascal Exposito, the workshop is today a true reference in French artisanal cutlery.

A story rooted in Basque tradition

The son of fishmongers in Biarritz, Pascal Exposito began his career training in knife sharpening. Quickly recognized for the precision of his work, he decided to create his own models, inspired by the Makila, the traditional walking stick of Basque shepherds. He chose an emblematic wood: scarified medlar.

From this ambition was born Mizpira, the very first Basque knife made of medlar wood, adorned with the Lau Buru, the Basque cross. The Artzaina, Bixia, Urkulua and Alios models followed, all designed with a commitment to quality, respect for tradition and innovation.

Each knife is a unique piece, handcrafted in the Bidart workshop, using local and symbolic materials : scarified medlar wood, Basque linen from Maison Lartigue 1910, Cesta Punta pelota leather, Kintoa pig or Herriko cow bone, leathers from the Carriat tannery in Espelette, ...
