      IN RESIDENCE AT THE GAZTELUR ESTATE

      RICE, LOVE, EAT!

      Let's dive into the story of two chefs passionate about gastronomy, determined to create innovative projects: Borja SUSTILLA BONILLA (TULA) and David GONZALEZ (EPOQ)

      Their budding collaboration leads to the "rice rice laugh at Gaztelur" event in spring 2023, and the formation of the "CULINARIA" group, dedicated to culinary innovation.

      In 2024, their vision takes shape with a residency since June, in an emblematic place in the Basque country:

      THE GAZTELUR ESTATE.

      In this idyllic setting, with a view of the park and the Rhune in the background, the glass-roofed restaurant and its shaded terrace will be the setting for their creativity.

      Under Olivier's artistic direction, the estate hosts a variety of activities, from the designer-florist boutique to the beehives and vegetable garden.

      At the heart of their culinary project is rice, available in all its variations, accompanied by Iberian notes dear to the master of the place and his children. David and Borja, chefs from both sides of the Pyrenees, transcend this ingredient to your greatest pleasure. Part of the menu will be prepared on the embers.


      Open from Wednesday to Saturday, lunch and dinner by reservation.

    The visit alone is worth it. A stroll through its interior and gardens is an experience, but if you add to this the very high-quality cuisine, the result is a place you shouldn't miss on your visit to the French Basque Country. It's a shame that the terrible service marred such a wonderful visit. I don't give it five stars for that. I went with my wife and we were served by a super rude and unfriendly waitress. She would forgive you with a look. Why she wouldn't let us order a set menu for one person and individual dishes for another when we were the only two diners in the restaurant is something I won't understand. Besides, it was all rude. They should be more careful with the staff they select, because, like us, they can ruin the experience.
