      Since 2010, Christophe has traveled the world, working in the different best cheese shops to learn the job. Back on his own lands, he has opened his first cheese shop in Bayonne. In this place that he thought and created in his mind for many years, you will find what makes « Christophe the cheesemonger » what he is today. Respectful of his products and producers, very careful with his cheeses, exigent and passionated. Good, nice and genuine cheese, dusted from its old fashion and ultra traditional french image that cheese must stink and be old …

      After years in Japan, Christophe got his « touch ». Revisiting some of the great classics of the French cheese industry, and at the meantime, preserving the DNA of each region of France and the Basque Country. Then, you will punctually find and according to the seasons, some washed rind cheese called, Langres, aged with Sake, small fresh goats cheese wrapped in sesame seeds, pistachio or filled with jams from Francis Miot. Camembert filled with ceps mushrooms, or aged in Calvados, Brie with truffle, Maroilles washed with local beers, or the typical Ossau-Iraty with summer truffle.

      The display fridge in the shop, has been thought as a mini-cellar for aging cheese, turned into a « museum showcase » like (cheese that you can obviously bring back home). You can taste with eyes, but also your tongue. Tastings are available and Christophe will always be there to make you taste his cheeses. A piece of cheese, while admiring the richness that the cheese culture can offer us. In glass aging cellars, you will see the cheese aging, and patiently waiting for its time. Finally, in the very heart of the city of Bayonne, the charm of the Rue Argenterie, will even bring your more pleasure and conviviality, at Christophe Fromager.

      Opening hours : Monday to Saturday from 10am to 7pm

      July and August : 7d/7d and the last 15 days of December

    I have been lucky to find this quintessential rare cheese shop in Bayonne! Christophe is a World Vice Champion cheese maker and has got the best organic cheeses I have bought in the region and in France so far- I went there initially to buy and try 1 or 2 cheeses and end up buying 6- I wholeheartedly recommend Christophe 's shop.His products are to cheese making what Michaelangelo is to arts... A MASTERPIECE

    Quite simply, the best cheesecake I have ever eaten in my life! I don't know what's in it, and luckily for my analyzes I live far from Bayonne, because it's a massacre. The cheeses are beyond what one might imagine, and the cheesemakers are intensely serious about their profession.
