  At 76 years old, Karlos Arguiñano is an essential media figure: chef, television presenter since the 90s (notably with programs such as El menú de cada día or Cocina abierta), producer through Bainet Media, and former holder of a Michelin star between 1982 and 1998. His cuisine stands out for its balance between tradition and innovation, and a firm commitment to local and seasonal products.
  
  Restaurant and bar
  At the hotel, the restaurant offers a modern Basque cuisine with a focus on local produce. This restaurant embodies the essence of modern Basque cuisine, directly inspired by the "New Basque Cuisine" pioneered by Karlos, Arzak, and Subijana. The main dining room and terrace offer views of the Cantabrian Sea. La verdad que no nos ha defraudado para nada ha sido una experiencia muy positiva calidad precio excelente servicio excelente ambiente excelente todo ha estado increíble y a unos precios muy razonables recomendable al 100 x 100 sin duda volveremos

Fuimos con mucha ilusión durante nuestras vacaciones, y uno de nuestros acompañantes es celiíaco. Antes de ir, consultamos la web del restaurante, donde se indica expresamente que se tienen en cuenta las alergias y que la carta las señala. Con esa información, decidimos venir. La realidad fue muy diferente. Al llegar, el camarero que nos atendió no sabía bien cómo funcionaba el tema del gluten y tuvo que preguntar a una compañera. La compañera nos dijo que la única opción sin gluten era la cerveza. Cuando le comentamos que en la web habíamos visto opciones, nos dijo que quizás en la zona de restaurante sí, pero que en el bar no, y que además en el bar solo existía carta en el restaurante. Otro compañero nos indicó después que podía haber contaminación cruzada en la cocina y que era mejor no arriesgarse. Con toda esa incertidumbre e información contradictoria entre el propio personal, tomamos la decisión de irnos sin comer. No podíamos arriesgarnos a la salud de nuestro acompañante cuando ni los propios camareros tenên clara la información. Entendemos que gestionar alergias en un restaurante no es sencillo, pero precisamente por eso es tan importante que el equipo esté bien formado. Un restaurante de este nivel y con este nombre debería tener protocolos claros y un personal que sepa responder con seguridad. Si no hay opciones reales sin gluten, lo correcto es no anunciarlo en la web, para no generar falsas expectativas a personas que dependen de esa información para su salud. Fue un momento desagradable en nuestras vacaciones que no esperabámos. Esperamos que lo tomen como una oportunidad de mejora.
