Nestled in a carefully renovated 1769 farm, discover an authentic Basque cutlery workshop in Bidart. Pascal Exposito and his cutlers create and manufacture Basque knives inspired by the emblematic elements of their culture and traditions. Here, no assembly line work, each craftsman makes his knife from A to Z.

To offer total transparency on the confection, the workshop is completely glazed. Visitors can thus safely observe and immerse themselves in the know-how of the cutlers while benefiting from explanations given by the sellers.

Discover their 5 models of Basque knives :

- Artzaina, a Basque knife directly inspired by the ancestral shepherds' cane, the Makila

- Bixia, shaped like an Espelette pepper, offered on its ideal support on cheese or charcuterie platters

- Mizpira, an Aveyron shape revisited with scarified medlar and a hand-carved Basque cross on the tip of the spring

- Urkulua, an identical reproduction of a blade found during archaeological excavations on Mount Urkulu and dated from the 17th century

- The Alios, a tribute to fishermen's knives with a unique blade locking system !

Les Couteliers Basques also offer high-end table knives that have proven themselves with starred chefs (like Hélène Darroze, Frédéric Simonin, the Ibarboure Brothers and many others) from the Basque Country and all over the world !

A guarantee of impeccable quality, these little jewels are guaranteed and benefit from free sharpening !

Knife care and customization

With more than 35 years of expertise, Les Couteliers Basques offers a maintenance service for knives made by them and elsewhere.

- Sharpening of all pieces of cutlery : pocket, table, kitchen knives, scissors, clipper combs, slicer blades, etc.

- Renovation of old table cutlery sets and old pocket knives... real treasures to which the cutlers give a second life !

The house also offers a personalized laser engraving service. Initials, first name, Basque cross, logo, everything is possible !

Open Monday to Saturday from 9 a.m. to 12 p.m. and from 2 p.m. to 6 p.m. and Sunday (July/August only) from 11 a.m. to 6 p.m.
