Nestled in a carefully renovated 1769 farmhouse, discover an authentic Basque cutlery workshop in Bidart. Pascal Exposito and his cutlers create and manufacture Basque knives inspired by the emblematic elements of their culture and traditions. Here, there is no assembly line work; each craftsman creates their own knife from A to Z.

To provide complete transparency into the production process, the workshop is entirely glass-enclosed. Visitors can safely observe and immerse themselves in the knifemakers' expertise while enjoying explanations from the sales staff.

Discover their 5 models of Basque knives:

• Artzaina, a Basque knife directly inspired by the ancestral shepherd's cane, the Makila.
• Bixia , in the shape of an Espelette pepper, offered on its ideal stand on cheese or cold meat platters.
• Mizpira, an Aveyron shape revisited with scarified medlar and a hand-carved Basque cross on the tip of the spring.
• Urkulua, an identical reproduction of a blade found during archaeological excavations on Mount Urkulu and dating from the 17th century.
• The Alios, a tribute to the knives of fishermen and sailors, equipped with a unique blade locking system!

Knife Maintenance and Personalization

With over 35 years of expertise, Les Couteliers Basques offers a maintenance service for knives of their own manufacture and elsewhere.

• Sharpening of all cutlery items: pocket knives, table knives, kitchen knives, scissors, clipper combs, slicer blades, etc.
• Renovation of old cutlery sets and pocket knives... real treasures to which cutlers give a second life!

The company also offers a personalized laser engraving service. Initials, first name, Basque cross, logo—anything is possible!

Schedules

Open Monday to Saturday from 9am to 12pm and from 2pm to 6pm and Sunday (July/August only) from 11am to 6pm.
