      Nestled in a carefully renovated 1769 farmhouse, discover an authentic Basque cutlery workshop in Bidart. Pascal Exposito and his cutlers create and craft Basque knives inspired by the iconic elements of their culture and traditions. Here, there's no assembly line; each artisan makes their knife from start to finish.

      To offer complete transparency in the crafting process, the workshop is entirely glazed. Visitors can thus safely observe and absorb the cutlers' expertise while benefiting from explanations provided by the sales staff.


      Discover their 5 models of Basque knives:

      • Artzaina, a Basque knife directly inspired by the ancestral shepherd's walking stick, the Makila.
      • Bixia, in the shape of an Espelette pepper, offered on its ideal stand on cheese or charcuterie platters.
      • Mizpira, an Aveyron shape revisited with scarified medlar and a hand-carved Basque cross on the tip of the spring.
      • Urkulua, an exact replica of a blade found during archaeological excavations on Mount Urkulu and dated to the 17th century.
      • The Alios, a tribute to fishermen's knives, featuring a unique blade locking system!


      The Basque Cutlers also offer high-end table knives that have proven themselves with Michelin-starred chefs (such as Hélène Darroze, Frédéric Simonin, the Ibarboure Brothers and many others) in the Basque Country and around the world!

      As a guarantee of impeccable quality, these little gems are guaranteed and benefit from free sharpening!


      Knife maintenance and customization

      With over 35 years of expertise, Les Couteliers Basques offer a maintenance service for knives they manufacture and others.

      • Sharpening of all cutlery pieces: pocket knives, table knives, kitchen knives, scissors, clipper combs, slicer blades, etc.
      • Restoration of old tableware and antique pocket knives… true treasures to which cutlers give a second life!

      The company also offers a personalized laser engraving service. Initials, first name, Basque cross, logo – anything is possible!

      Schedules

      Open Monday to Saturday from 9am to 12pm and from 2pm to 6pm and on Sunday (July/August only) from 11am to 6pm.
