      Sakari Basque sauce is undoubtedly the flagship product of Maison Petricorena.       The recipe for Sakari Basque sauce was passed down by Laurent Petricorena, a Basque shepherd who, after emigrating to Argentina, learned to season mutton in a unique way. Upon returning to the Basque Country, he expanded the family butcher shop in Saint-Étienne-de-Baïgorry and became known for organizing Zikiros, large country meals where he served roast mutton with his distinctive sauce. His son, Jean-Pierre, nicknamed "Sakari" (the scorer in Basque) for his exploits in Basque pelota, popularized this sauce, which now bears his name.
