Directions Les Cannelés du Pays Basque - Traditions and their know-how in Saint-Jean-Pied-de-Port

About

  • English
    • Manufacturer of “specialty macarons” for your greatest pleasure…

It is in homage, especially to my grandmother, my mother and also to all the parents and grandparents in the world who transmit, with love, to their children and grandchildren the secrets of good cooking and good baking, that we want to preserve their traditions and their know-how. Thus and thanks to them, we are proud to make our macaroons every day, for the greatest pleasure of gourmets and lovers of authentic, simple and natural flavors...

We still work in an artisanal way, in fact, each macaron is prepared by hand, using a piping bag, just like in the old days.

Our macarons are made exclusively with selected dried fruits, crushed, ground or grated such as: Almonds, Hazelnuts, Coconut, Lemon and Turmeric that we macaron with a little sugar and egg white. We do not add any fat, coloring, or preservatives and of course, our macarons are flourless. You taste bites of happiness made with natural ingredients and an ancestral technique, it is simply respect for traditions.

We make sweet cannelés and savory cannelés for appetizers, which sets us apart in the cannelé world!

We currently offer several different varieties such as:

      • traditional rum cannelés
      • rum and raisin
      • chocolate chips and Espelette pepper
      • prune Armagnac
      • candied cherry
      • candied mandarin
      • chorizo piquillo peppers
      • dried tomatoes
      • feta basil
      • ham and cheese
      • Veggie: asparagus, sheep's cheese - tapenade...

In a rum baba style glass at the 3 shops:

      • Traditional rum cannelés
      • Rum and raisin
      • Chocolate chips
      • Espelette pepper
      • Prune Armagnac
      • Candied cherry
      • Candied mandarin

New: Honey and peanut biscuit and fig and cinnamon

Our macarons are fresh and can be frozen perfectly. You can defrost them at room temperature or bake them for a few moments; that way, you'll feel like your grandmother just made them for you...

For optimal preservation, please keep them in their sealed bag, in a dry place away from light. They will keep for several weeks.

But as my grandmother always says: "taste them..., before someone else tastes them for you!!!..."

Homemade pilgrim-style cereal bar (100% dried fruit and honey). And a coconut and chocolate chip macaron.

New: mac'canelés: coconut macaroons in the shape of large cannelés with mini rum canelés inside
