Basque cake has been a staple at Arraya since its creation in 1951. Sébastien FAGOAGA has succeeded his father, Paul Fagoaga, since the 2000s and is the only one to hold the secret recipe for this iconic Basque specialty. The choice of raw materials is essential, so we offer a 100% pure butter cake and our homemade cream is made with milk from the "Oreka" cheese dairy in Sare. Let's not forget the small shortbread biscuits made from the same dough (ideal with tea and homemade jam from the Arraya Boutique).
