Pierre Ibaïalde Products on sale directly at the workshop boutique in the heart of the Basque Country

For over 30 years, Pierre Ibaialde has passionately shared his craft and expertise in the heart of Petit Bayonne. In his workshop-boutique, he offers a unique experience blending tradition, authenticity, and Basque gastronomy.

Immerse yourself in the world of artisanal curing during a guided tour lasting approximately 45 minutes, including a tasting of homemade products. You'll discover the secrets of ham-making, from pig breeding to curing, including salting and drying. A complete behind-the-scenes immersion in the workshop, including an impressive tour of the curing room with its 800 hanging hams.

The shop, open all year round, offers for sale specialties made on site:

• Ibaialde ham
• Sausage with Espelette pepper puree
• The AXOA of Veal
• Basque blood sausage with Espelette pepper puree
• The Ventrèche
• Coppa and dried lomo

Guided tours can be booked online: https://pierre-ibaialde.com/ They cost €5 for adults and €2.50 for children aged 8 to 14.
The store is open Monday to Saturday from 9am to 12:30pm and from 2pm to 6pm. In July/August the store is open every day from 10am to 1pm and from 2pm to 7pm.
