    • For over 30 years, Pierre Ibaialde has passionately shared his craft and expertise in the heart of Petit Bayonne. In his workshop-boutique, he offers a unique experience blending tradition, authenticity, and Basque gastronomy.

      Immerse yourself in the world of traditional cured meats during a guided tour of approximately 45 minutes, including a tasting of homemade products. You'll discover the secrets of ham production, from raising the pigs to salting and drying, and finally, the curing process. Enjoy a complete behind-the-scenes look at the workshop, including an impressive walk through the curing room with its 800 hanging hams.


      The shop, open all year round, offers for sale specialties made on site:

      • Ibaialde ham
      • Sausage with Espelette pepper puree
      • Veal AXOA
      • Basque black pudding with Espelette pepper puree
      • The Ventrèche
      • Coppa and dried Lomo


      Guided tours are booked online. They cost €5 for adults and €2.50 for children aged 8 to 14.
      The store is open Monday to Saturday from 9am to 12:30pm and from 2pm to 6pm. In July/August the store is open every day from 10am to 1pm and from 2pm to 7pm.

    Nous sommes venus exprès à Bayonne uniquement visiter ce lieu ( réservation conseillée) . L’accueil avec le sourire, explications intéressantes. La chaleur de la pièce était assommante malgré un courant d’air et le fait que ce ne soit pas la canicule ce jour là ( 25-27 degrés extérieur) . Nous passerons commande avant les fêtes de fin d’année : les saucissons et le jambon cru sont délicieux.
