HINO, the Biarritz sunrise we were waiting for without knowing it

It’s summer, and every week we’re taking you on a journey to discover a new gourmet spot in the Basque Country.

Last week, we had a lovely meal at Cantine Dodue, the canteen and rotisserie in Petit Bayonne that smells so deliciously of roast chicken. It’s episode 2, and we’re already crossing the River Nive to head to Biarritz.

Two sisters, a family legacy, Asian-inspired ravioli, and a cozy sofa corner to linger in. HINO has gently, but with character, won the hearts of Biarritz residents.

Next up is HINO, a café-restaurant, the brainchild of two sisters well-known to Biarritz locals. Marine and Nine grew up in the kitchen: daughters of the chef at SIN, and for longtime regulars, of Sissinou. Their duo has taken over 3 rue Larralde, in the former Chez Pilou, a rustic bistro beloved by its regulars. As a nod to this history, they've preserved the mosaic floor and the bar, the true centerpiece of the establishment.

At the rear, the space opens up like a home : a large table for friends facing a bookcase, a sofa area for relaxing, and a patio that extends the light. As for the decor, light wood paneling, contemporary furniture, and raw materials complement each other to brighten the space and create a soft, warm, and decidedly modern atmosphere.

Let's talk about the food. At HINO, the signature dish is ravioli, a clear nod to their father's cooking, where ravioli has always been a staple. Here, they take on an Asian flavor : HINO means "sunrise" in Japanese, and the pasta is inspired by Chinese rather than Italian cuisine. In the kitchen, the chef, formerly of Chez Ibarboure, and Sébastien have created a short and precise menu featuring three ravioli : a vegetarian version with mushrooms, a meat version (currently with beef chuck), and a fish version with curried shrimp. They also offer a weekly special, based on market availability, and a few savory dishes to share for those with larger appetites.

On the sweet side, two desserts take center stage: Maison Rouge's chocolate fondant, twisted with a vanilla mascarpone cream, or a caramel crème renversée that lives up to its name and promises to win over more than one person.

In the glasses, you'll find specialty coffees from Azeria Torréfaction, matcha from the Spanish company Tranquilo, Bissap and Datxa cold drinks, and a few well-chosen wines for those who might want to raise a glass.
