About

    • TOPA, a Basque artisanal cider at the heart of an eco-responsible approach

The Brasserie du Pays Basque produces artisanal beverages deeply rooted in the Basque terroir. At the heart of this approach is TOPA, an artisanal cider produced in Astigarraga, which embodies the brewery's essential values : respect for the fruit, traditional know-how, and local commitment.

TOPA is an internationally award-winning tasting cider, with several gold medals at the World Cider Awards and the Asturias International Cider Fair. Dry and crisp, it reveals subtle aromas of fresh apple, resulting from a natural fermentation lasting over four months. Made from Basque apple varieties, it relies on a rigorous artisanal process : harvesting at peak ripeness, hand-sorting, and fermentation using only the fruit's natural yeasts.

The brewery joined TOPA to support its growth while preserving its identity and the expertise of the original team. This partnership strengthens the visibility of artisanal Basque cider, alongside other high-quality local products.

TOPA can be enjoyed both as an aperitif and with a meal, pairing well with Basque cuisine, seafood, or sheep's cheeses. Its dry and balanced profile appeals to lovers of authentic drinks.

The Basque Country Brewery prioritizes short supply chains and works with local producers. It actively contributes to the local economy and the promotion of Basque gastronomic heritage, within a framework of sustainable, responsible and environmentally friendly tourism.

Choosing Brasserie du Pays Basque means supporting local artisanal production, traditional know-how and an eco-responsible approach, committed to preserving the Basque terroir.
