Freya is the goddess of nature in Norse mythology ; she represents renewal and abundance. Thus, their restaurant aims to be an ode to nature and seasonality, offering unpretentious gourmet cuisine with a focus on plant-based ingredients.

Following their experiences and travels in France and abroad, they have profoundly changed their relationship with nature and wish to emphasize ecology. They work exclusively with local producers committed to sustainable agriculture. Depending on the produce available at the market, Guillaume creates a unique and surprising menu with the aim of reversing traditional roles and highlighting vegetables rather than meat.
