    • For over 40 years, Onetik has been defining the codes of authentic cheese production. Its approach is TRUE, attached to its roots, its history and those who made it grow. It strives to preserve , over the years, the fundamental values on which it was built: know-how, trust, tradition and respect for its land, its people and its animals.


      PROUD OF ITS EXPERTISE

      Onetik's partner breeders are required to provide quality milk. On their farms, the sheep, cows and goats are fed healthily (guaranteed GMO-free for the Ossau-Iraty PDO), benefiting from all the richness of the grass and flora of the Basque meadows. The milk is collected from the farms by Onetik before being processed in the Macaye workshops. There, cheesemakers and refiners put all their know-how into transforming the milk into cheeses. Matured over time and of great taste, each cheese is unique.

      Basque cheese is a jewel of French gastronomic heritage. Onetik perpetuates Basque traditions, omnipresent in cheesemaking thanks to local skills, thus boosting the dynamism of the region.


      ONETIK, MORE THAN 40 YEARS OF PRODUCING CHARACTERISTIC CHEESE, EMBLEMATIC OF THE BASQUE COUNTRY, AUTHENTIC AND NATURAL PRODUCTS


      Although the cheese-making tradition of the Basque Country gives pride of place to the famous AOP Ossau-Iraty sheep's milk cheese, Onetik offers a very fine range of cheeses made from sheep's, cow's and goat's milk or mixed milks.


      THE ONETIK CHEESEMAKER'S SELECTION

      • Ossau Iraty AOP Grande Réserve

      This is an uncooked pressed cheese, derived from ancient Occitan customs of producing sheep's milk tommes. The appellation unifies Béarnaise traditions (Ossau Valley) and Basque traditions (Iraty Forest) through two cheeses. They are both distinguished by their differences in format, taste characteristics, or in the choice of sheep breeds. Basco-béarnaise is traditionally raised in Ossau, on the Béarn side, while Manech is raised in Iraty, on the Basque side. Matured to the core, this cheese is distinguished by its strong character. Its flavors are more pronounced, its structure more robust.

      • Chebris, the cheese made from sheep and goat's milk

      A beautiful combination. Crumbly at first, this cheese will melt on your palate, revealing its aromas. The softness of the sheep's milk reveals delicate goat notes, whose rusticity leaves a slight nutty taste.

      • Bleu des Basques made from sheep's milk

      A ONETIK creation. Bleu des Basques is not just another innovation; it is the first blue sheep's cheese from the Basque Country. The finely developed marbling on the crumbly structure of this blue sheep's cheese gives it an iodized character as well as a fine persistence.

      The path chosen by ONETIK, of respect for tradition and commitment to the land, has allowed cheeses that were originally modest but tasty mountain specialties, intended for family consumption or for the small economy between villages, to be rewarded and recognized by the most discerning gourmets around the world.

      9 medals at the International Products Competition at the Mondial du Fromage 2023, 9 distinctions at the World Cheese Awards 2022, 6 at the International Cheese Awards and 4 at the Concours Général Agricole 2022.


      Don't hesitate to come and taste its delicious cheeses directly at the shop in Macaye, open Monday to Friday from 9:30 a.m. to 6 p.m. all summer and from 9:30 a.m. to 12:30 p.m. and from 2 p.m. to 6 p.m. the rest of the year.
      Our store is closed on public holidays and weekends.

    Upon arrival, you're treated to a tasting of various Basque cheeses, of course. I bought several and saved money too. I highly recommend it.
