    • For more than 40 years, Onetik has defined the codes of authentic cheese production. Its approach is TRUE, attached to its roots, its history and those who made it grow. It strives to preserve, over the years, the fundamental values on which it was built: know-how, trust, tradition and respect for its land, its people and its animals.


      PROUD OF ITS KNOW-HOW
      Onetik's partner breeders must provide quality milk. On their farms, the ewes, cows and goats are fed healthily (GMO-free guarantee for the AOP Ossau-Iraty), benefiting from all the richness of the grass and flora of the Basque meadows. The milk is collected from the farms by Onetik before being processed in the Macaye workshops. There, cheese makers and affineurs put all their know-how into transforming milk into cheese. Refined over time and of high taste quality, each cheese is unique.

      Basque cheese is a jewel of French gastronomic heritage. Onetik perpetuates Basque traditions, omnipresent in the cheese dairy thanks to local skills, thus boosting the dynamism of the region.


      ONETIK, MORE THAN 40 YEARS OF CHARACTER CHEESE PRODUCTION, EMBLEMATIC OF THE BASQUE COUNTRY AUTHENTIC AND NATURAL PRODUCTS


      Even if the cheese tradition of the Basque Country gives pride of place to the famous PDO sheep's cheese Ossau-Iraty, Onetik offers a very fine range of cheeses made from sheep's milk, cow's milk and goat or mixed milks.


      THE ONETIK CHEESE MAKER'S SELECTION


      L'Ossau Iraty AOP Grand Reserve
      It is an uncooked pressed cheese, resulting from the ancient Occitan customs of production of tommes de brebis. The Appellation unifies Béarnaise traditions (Ossau valley) as well as Basque traditions (Iraty forest) through two cheeses. They are both distinguished by their difference in format, taste characteristics or in the choice of breeds of ewes. The Basco-Béarnaise is traditionally raised in Ossau, on the Béarnais side, while the Manech are raised in Iraty, on the Basque side. Thoroughly matured, this cheese is distinguished by its frank character. Its flavors are more marked, its structure more corpulent.

      Chebris, tomme cheese made with sheep's and goat's milk

      A beautiful union. Crumbly at first, this tomme will melt on your palate, revealing its aromas. The sweetness of sheep's milk expresses delicate goaty notes, the rusticity of which leaves a slight nutty taste.

      Bleu des Basques with sheep's milk
      An ONETIK creation. Bleu des Basques is not an innovation like any other, it is the first sheep's cheese blue from the Basque Country. The finely developed parsley on the crumbly structure of this sheep's blue cheese gives it an iodized character as well as a fine persistence.

      The path chosen by ONETIK, of respect for tradition and commitment to the land, has enabled cheeses that were originally modest but tasty mountain specialties, intended for family consumption or small economy between villages, to be rewarded and recognized by the most discerning gourmets around the world.

      9 medals at the Mondial du Fromage 2023, 9 distinctions at the World Cheese Awards 2022, 6 at the International Cheese Awards and 4 at the 2022 General Agricultural Competition.


      Do not hesitate to come and taste its tasty cheeses directly at the shop in Macaye, open Monday to Friday from 9:30 a.m. to 6 p.m. all summer long and from 9:30 a.m. to 12:30 p.m. and from 2 p.m. to 6 p.m. the rest of the year.
      Our shop is closed on public holidays and weekends.

    I just bit into a thick slice of Brebis, and my immediate response was, "Oh my God", I am in heaven! This Brebis, which is 50% goat's and 50% sheep's cheese is absolutely remarkable in creaminess and texture that coats the entire palate. I have never, ever tasted a cheese that is so rich with flavor and aroma: each bite demands another one. I forward to pairing it with Italian grapes and a bottle of Blanquette Limoux.
