It strives to preserve, over the years, the fundamental values upon which it was built: expertise, trust, tradition, and respect for its land, its people, and its animals.

      Onetik's partner farmers are committed to providing high-quality milk. On their farms, the sheep, cows, and goats are fed a healthy diet (guaranteed GMO-free for the Ossau-Iraty PDO), benefiting from the rich grass and flora of the Basque meadows. The milk is collected from the farms by Onetik before being processed in the Macaye workshops. There, cheesemakers and affineurs use all their expertise to transform the milk into cheeses. Matured over time and boasting exceptional flavor, each cheese is unique.

      Although the cheese-making tradition of the Basque Country gives pride of place to the famous Ossau-Iraty PDO sheep's cheese, Onetik offers a very fine range of cheeses made from sheep's, cow's and goat's milk or mixed milks.


      THE ONETIK CHEESEMASTER'S SELECTION

      • Ossau Iraty AOP Grande Réserve

      This is a pressed, uncooked cheese, originating from ancient Occitan traditions of sheep's milk cheese production. The Appellation unifies the Béarnese (Ossau Valley) and Basque (Iraty Forest) traditions through two cheeses. They are distinguished by their different sizes, flavor profiles, and the breeds of sheep used. The Basco-Béarnaise is traditionally raised in Ossau, on the Béarn side, while the Manech is raised in Iraty, on the Basque side. Matured throughout, this cheese is distinguished by its bold character. Its flavors are more pronounced, and its texture is more robust.

      • Chebris, the tomme cheese made with sheep's and goat's milk

      A beautiful combination. Initially crumbly, this cheese melts on your palate, revealing its aromas. Delicate goat notes emerge from the sweetness of the sheep's milk, while its rustic character lends a subtle nutty flavor.

      An ONETIK creation. Bleu des Basques is not just another innovation; it is the first blue sheep's milk cheese from the Basque Country. The finely developed marbling on the crumbly structure of this blue sheep's milk cheese gives it a briny character and a subtle persistence.

      Feel free to come and taste its tasty cheeses directly at the shop in Macaye, open Monday to Friday from 9:30 am to 6 pm all summer and from 9:30 am to 12:30 pm and from 2 pm to 6 pm the rest of the year.
      Our shop is closed on public holidays and weekends.
