Istara Cheese Factory: More than 60 years of commitment to the Basque Country

Located in the small village of Larceveau, in the heart of the Basque Country, the Istara cheese dairy has been cultivating its know-how, derived from pastoral tradition, since 1964. The milk is collected from more than 500 small family farms in the vicinity of the cheese dairy. These shepherds raise their local breed sheep in the pastures of the Pyrenees and thus deliver to us every day a naturally rich and fragrant milk which gives all its flavor to the AOP Ossau-Iraty Istara.

OSSAU-IRATY AOP ISTARA

All the authenticity of the Basque Country. It benefits from a Protected Designation of Origin which certifies the production with milk from local sheep breeds. It is matured for a minimum of 4 months and up to 7 months for the Grand Affiné version. Its taste is fruity and its texture melts deliciously in the mouth. To be enjoyed Basque style in thin slices accompanied by black cherry jam.

CHISTOU D'ISTARA

The fruity taste of sheep's milk combined with the sweetness of cow's milk. It is a cheese made from a mixture of cow's and sheep's milk, matured for around 90 days. Its taste is both mild and distinctive, combining the character of sheep's milk with the more moderate character of cow's milk. Its soft, melting texture with a beautiful ivory color adds to the pleasure of tasting.

LITTLE BASQUE OF ISTARA

This is a small , pure sheep's milk tommette with a soft, melting texture and a subtly fruity flavor. Its unique, delicately sculpted crust is characteristic of the wicker molds of yesteryear. It also comes in a mixed version, which combines the distinctive goat's milk with the delicate taste of sheep's milk.
