      At the crossroads of the Basque Country and Béarn, in Saint-Palais, a unique establishment is redefining the codes of dairy craftsmanship: La Laiterie Caprine (The Goat Dairy ). The project originated as a family story, with roots in a Corsican heritage, extending through the Lot region and the Cévennes mountains. Drawing on their experiences and travels, Raphaëlle and Maxime wanted to restore meaning and refocus on what truly matters.

      The Goat Dairy is a unique space, located in an alternative living space: the village of Bilbalza in Saint-Palais. This industrial area has been transformed into commercial halls.

      The concept is unprecedented in France. Here, only carefully selected goat's milk from local farmers is used, and it is processed on site to create unique and atypical products that reflect their character.


      Artisanal expertise dedicated to raw milk and unique flavors

      The Goat Dairy stands out for its radical approach: working exclusively with raw milk. No product is pasteurized in order to preserve the beneficial properties of goat's milk. The range consists of cheeses and dairy desserts that explore original flavor profiles.

      Inspired by their own experiences, the cheesemakers offer creations with unique flavors. Discover daring combinations like goat's milk with smoked Madagascar pepper, pepper and verbena, or even vanilla coffee, a gem discovered in Ireland. The flagship product remains the Canut, a creamy spreadable cheese inspired by a Lyonnaise recipe, but reinvented here with finesse.


      Tastings and gatherings: a gourmet living space in Saint-Palais

      More than just a shop, the dairy has been designed as a gourmet market hall, a place where people come seeking authenticity. Open Tuesday to Saturday (10:00 AM - 6:30 PM), it promises some wonderful surprises starting in February 2026, including tasting evenings. By reservation, these special events will offer a sneak peek at new products and allow you to soak up the energy of this dynamic and promising location.

      For those unable to travel to Saint-Palais, the dairy's products are prominently featured in the region's iconic markets:
