    • BASTIDARRA DAIRY: YOGURTS AND DAIRY SPECIALTIES FROM THE BASQUE COUNTRY

      The Bastidarra dairy is, above all, a beautiful story of passionate people. Located in Bardos, in the Basque Country, the dairy was founded by a craftsman (Hubert Candelé). Wishing to integrate dairy production into the dairy, four farmers joined forces in this endeavor : Pascal Candelé, Claude Detchegaray (EARL Cailleba, sheep milk producer), Gilbert Detcheverry (EARL Portantinia, cow milk producer), and Philippe Léglise. (EARL Couture, dairy cow producer).


      Simply delicious yogurts

      The milk collected each morning from our partner farms is neither standardized nor homogenized in order to preserve all its flavor. The farms are committed to the HVE (High Environmental Value level 3) approach, and the animals' feed, primarily pasture-based, is guaranteed GMO-free.

      Recipes made from cow, sheep, and goat milk are produced in the workshops:

      • Steamed and stirred yogurts
      • Fresh cheeses, whipped cheeses, faisselles, curds
      • Dessert creams
      • Milk-based custards and egg creams
      • Mousses

      Bastidarra is also a story of commitment.

      The artisanal dairy places sustainable development at the heart of its strategy. Eco-design is therefore a logical extension of its approach and requirements:

      • Producing innovative, high-quality products
      • Promoting local milk
      • Supporting sustainable agriculture rooted in its territory
      Recently awarded the "Engagé RSE – Exemplary" label, Bastidarra strengthens its environmental, social, and societal commitments every year:
      • Housing provided for employees
      • A gym and nap room for staff
      • An agricultural employee for replacement services, 50% funded by the dairy
      • An installation grant for young farmers
      And many other initiatives that reinforce the dairy's connection to its local community.
