A palm tree on a cheese! The Elizarea family farm has been passed down from father to son for five centuries. At the helm are the Etchepare brothers. Alain and André started a few years ago with sheep farming before branching out into making veal axoa, mutton tagine, mutton cassoulet, and above all, raw sheep's milk cheese. A true passion!

Production is seasonal (from December to June), then the herd is moved to summer pastures in the Hautes Pyrénées.

Ready to welcome you, they will answer all your questions, proud to share some of their passion with you by showing you around their farm and tasting their cheese, a pure Ossau-Iraty sheep's cheese (made with raw sheep's milk).

Palm tree fair in Hendaye every Tuesday.
Also on Mondays at the traditional market in Saint-Jean-Pied-de-Port and on Thursdays at the farmers' market in Saint-Jean-Pied-de-Port.
