    • Pierre has been welcoming you for more than 30 years to help you discover his workshop and his trade. This guided tour lasts approximately 45 minutes, including tasting. You will know everything about the secrets of preparing ham, from raising pigs to refining the pieces for many months. You will cross the ripening room with 800 hanging hams, the salt and the dryer will be presented to you in detail. And you will end up tasting the flagship products of the house.

      Products sold directly at the workshop shop.

      Open Monday to Saturday 9 a.m. to 12:30 p.m. and 2 p.m. to 6 p.m.
      Closed on Sundays and public holidays
      July/August : from 10:00 am to 7:00 pm 7 days a week

      - IBAIALDE Ham
      - Whole duck foie gras
      - The pork sausage flavoured with Espelette pepper purée
      - Veal axoa
      - Pure duck rillettes
      - Pudding with Espelette pepper purée
