We offer: Ibaïama and Bayonne ham, foie gras, cured meats, Basque and country pâtés, pure pork black pudding, duck rillettes, chichons (a type of sausage), confits, prepared dishes (veal axoa, Basque-style tripe, garbure...), Espelette pepper, etc...

Not familiar with Ibaïama ham? It's a premium ham that is hand-salted with dry salt from the Adour River and then aged for 18 to 22 months in the Basque Country winds. To ensure its authentic flavor, the pigs are raised in Saint-Jean-Pied-de-Port and fed a non-GMO diet.
