Accoceberry Ham, Charcuterie, salted meats in Espelette

Maison Accoceberry began in 1959 with a butcher's shop in the heart of the village of Espelette in the Basque Country. To diversify, the shop offered delicatessen dishes based on typical Basque recipes which were subsequently marketed in canned form, thanks to the cannery which was set up not far from the shop.

Ham is a flagship product of the Basque Country. It is therefore natural that the Accoceberry house offers you two very different local hams, but both produced in the Basque Country.

The famous Bayonne IGP ham, a mythical ham, tender and sweet, delicate in taste that will delight children and adults alike. This ham can also be eaten raw on a platter or in thin slices with cheese or cooked with eggs.

Maskarrada ham, named after its producer, is a Basque pork ham, "Euskal Txerriak". Just like its cousin the black pig, this one is sublimated when it is raised in the open air and feeds on acorns and chestnuts (and many other foods it finds on the ground). This ham is fattier, with a more fragrant taste. Close to Pata Negra, it will certainly captivate the greatest ham lovers.

The Espelette dryer was naturally added to the cannery in early 2021, in order to be able to offer new cold cuts and develop some of them.

Thus you will be able to find our emblematic: country pâtés plain or with Espelette pepper, the xistorade a specialty of Accoceberry, or even pork or duck chichons.
