    • Maison Accoceberry began in 1959 as a butcher and delicatessen in the heart of the village of Espelette in the Basque Country. To diversify, the shop offered prepared dishes based on typical Basque recipes, which were later sold canned, thanks to the cannery that was established not far from the shop.

      • Ham is a flagship product of the Basque Country. It is therefore natural that Accoceberry offers you two very different Basque hams, both produced in the Basque Country.
      • The famous Bayonne ham (IGP), a legendary ham, tender and mild, with a delicate flavor that will delight children and adults alike. This ham can be enjoyed raw on a platter or in thin slices with cheese, or cooked with eggs.
      • Maskarrada ham, named after its producer, is a Basque pig ham, made from the local breed, known as "Euskal Txerriak." Like its cousin, the black pig, this ham reaches its peak when raised outdoors and fed on acorns and chestnuts (and many other foods it finds on the ground). This ham is fattier and has a more aromatic flavor. Similar to Pata Negra, it is sure to captivate even the most discerning ham connoisseurs.

      The Espelette drying facility was a natural addition to the cannery at the beginning of 2021, in order to be able to offer new charcuterie products and develop some of them.

      Thus, you will be able to find our emblematic products: plain country pâté or pâté with Espelette pepper, xistorade, a specialty of Accoceberry, or even pork or duck chichons.

      Discover all our new products, exquisite creations crafted by our team, such as sausages, filet mignon, Basque lomo, and kopa (a Basque-style coppa). A blend of tradition and originality , these charcuterie items will delight young and old alike.

    Discover the Basque Country and its gastronomy with a visit to Espelette. We bought a whole ham from Accoceberry, not Bayonne. It's a pure delight, as is the sheep's cheese. Don't hesitate; you won't be disappointed and you'll be very well received. Thank you to all these artisans for treating us.

    Several experiences on the site, nothing to complain about. The package is always very well packaged. I received 2 broken pots out of 12 (thanks to the post office), customer service is very understanding and responsive! I will recommend without worries :-)
