ARTISAN BUTCHER – CURING SPECIALIST – PRESERVER
The Arka House, in addition to being an artisan butcher, preserver, and cook, is also a specialist in cured meats. Discover in their shop the Basque Kintoa AOP pork hams aged 28 months and the Manex pork ham aged 24 months. Crafted using traditional methods that naturally refine over time.
"Saran beti astia" – in Sare, we take our time. From the shop, you can see the drying room where the pancetta, dried loin, coppa, dried sausages, and chorizo are cured. All these cured products are made without nitrite salt or preservatives, respecting traditional recipes and allowing time to enhance flavor. Charcuterie at Arka is flavorful and refined, perfect for appetizers or gourmet meals.
