    • Gorriak, recipes 100% cooked in Espelette!

      It is in our drying room and cannery in the heart of the village of Espelette that Gorriak creates recipes according to tradition. Our cheerful trio of chefs – the head chef, the cannery chef, and the ham-drying chef – work together to reinvent traditional Basque dishes and cured meats.

      GORRIAK, meaning "red" in Basque, was therefore born from their passion and their know-how.

      Handcrafted

      In short, GORRIAK is chefs' recipes and all the know-how of Espelette.
      Our methods are artisanal because we are committed to respecting Basque culinary tradition and offering excellence to lovers of authentic products. Our products are homemade, and we focus entirely on quality. The village cannery has been in operation for over 50 years, and the curing facility is distinguished by its aging process, which results in a melt-in-your-mouth texture and delicate flavors.

      When you have local artisanal know-how whose quality is widely recognized, it would be a shame not to share it!

      80% of the ingredients are sourced locally.

      To offer you good products, we obviously need good ingredients ! We source our ingredients from trusted partners located near our village. This allows us to guarantee that 80% of our products are made using local suppliers.

      Authentic and tasty products

      All GORRIAK recipes are original and made "homemade", in Espelette in the heart of the Basque Country.

      On the menu at Gorriak you will find:

      • Our local terrines: Basque pâté with Espelette pepper, country pâté, piquillo pepper pâté, ximista pâté, xistorade and Basque black pudding spread, and also foie gras…


      • Our prepared dishes: Veal Axoa (the village specialty), Veal and pork Axoa, Basque Piperade, confit sausages, pork confit and soon other new items to delight you!
      • Our seafood products: Basque-style baby squid, squid in ink sauce, mackerel rillettes with mustard and Espelette pepper, sardine rillettes with Espelette pepper and our tuna rillettes with Espelette pepper.


      • Our condiments: Espelette pepper powder PDO, Espelette pepper jelly, Espelette pepper puree, Espelette pepper salt, old-fashioned mustard, hot sauce and especially Xipister for your barbecues!
