Welcome to the House of the Pig! As a professional artisan butcher, Arka celebrates local pig breeds. They work directly with Manex farm-raised pigs from the Saint-Jean-Pied-de-Port area and are part of the Basque Kintoa AOP pork network.
All preserves, prepared dishes, and cured meats are made entirely in-house in the workshop. Every recipe is created by Tristan and then perfected by his talented team. From Basque pâté with Espelette pepper, confit loin, candied sausages, pork stew with chorizo, to garbanzos – there's something for every taste.
Come visit them at the Sare shop; they will be delighted to offer their advice.
