Aviron Bistronomie Taste laboratory & local cuisine in Bayonne

Aviron Bistronomie would be nothing without its gastronomic team. It was only natural that Lionel ELISSALDE was chosen as its captain.
Trained at the Biarritz Hotel School, he enriched his expertise by working in renowned establishments in France and abroad. His insatiable desire for discovery led him beyond our borders: from the United States to London, from Brussels to Switzerland, where he drew inspiration from the most diverse culinary cultures.

After returning to the Basque Country, he worked for a decade at St Amour in Biarritz as well as in several other renowned restaurants, until the creation of his restaurant in Bayonne, Maison Martin, in which he worked for the last 13 years and which marked the development of his style, before joining Aviron Bistronomie at the end of 2023.

Following the successful launches of its various activities, Aviron Bistronomie aims to further diversify by offering in-home catering. This will allow clients to enjoy the bistronomic cuisine of a chef passionate about his local region, renowned for the quality of his offerings, throughout their stay or for a special meal.
