About

  • English
    • Basque Cakes:

It is said that there are as many recipes for this cake as there are Basque houses, each with its own little secret of preparation.

The recipe from Maison Pariès has been passed down from generation to generation since 1938. Based on excellent raw materials and artisanal know-how, the formula developed by Robert Pariès has not changed one iota.

The "homemade" recipe combines the crispness of the golden pastry with the delicacy of the almond cream, the finesse of the black cherry jam, the roundness of its chocolate, the sweetness of the hazelnuts, or even the freshness of the citrus fruits.

      New: The 1895

To celebrate its 130th anniversary, Maison Pariès pays tribute to the Basque cake with Le 1895. Made with ingredients sourced from the Basque Country, this creation will see its flavor evolve with the seasons and the availability of raw materials. This first iteration was created using heritage apple varieties from the Basque Country: Anisa, Eri Sagarra, Musu Xuri…

      Pariès macarons:

An emblem of the corsair city, the Saint-Jean-de-Luz macaron, made only of egg whites, sugar and almonds, is a soft biscuit with a thin shell.

Maison Pariès has been making it since 1914, delicately sprinkling it with a little sugar for even more indulgence.

      The Pariès muslin squares:

Often mistaken for a classic macaron, this exceptional specialty with its inimitable taste is part of the Basque culinary heritage. Unique and created in 1948 by Robert Pariès, this sweet treat consists of two beautifully joined round halves with a soft, almond-rich, and low-sugar center. Its name, which means "kiss" in Basque, is itself a revelation of tenderness and gustatory pleasure. The mouchou comes in five flavors: almond, pistachio, chocolate, hazelnut, and coffee.
