    • Since 1877, Maison Mayté has been transforming and maturing its hams and charcuterie in Saint-Jean-le-Vieux, in the heart of the Basque Country. Éric and Sylvie, the fifth generation to run the business, work with local farmers and perpetuate a traditional, artisanal curing process.


      The Ham

      The house specialty, Ibaiama ham, is cured for 24 months in an open-air drying room, suspended behind louvers that allow the seasons of the Basque Country to filter in. Alongside it, Bayonne hams are cured for 12 months, as are regional hams for 17 months and sow hams for 25 months, completing the range.


      Sausages and chorizos

      The Basque Beret sausage, shaped in its characteristic form, comes in three delicious flavors: Pepper, Espelette Pepper, and Tomato-Basil. The company also offers its traditional sausage and dry sausages, crafted in various shapes to suit different tastes, as well as a chorizo available in both spicy and mild varieties.


      Cured meats

      The range is completed with ventrèche, rolled or flat, dried Ibaiama lomo, and all the sausages from the house.


      Homemade preserves and prepared meals

      In the cans, you'll find everything from veal cassoulet or axoa to Basque piperade, garbure, beef bourguignon, Bolognese sauce, and cooked beef meatballs. The company also prepares cooked lentils, confit sausages, black pudding, head cheese, and a range of pâtés and rillettes: country pâté, pâté with Espelette pepper, porcini mushroom pâté, and rillettes with Espelette pepper.


      Duck

      Foie gras, duck confit, confit gizzards: duck is also available in several preparations, in the same spirit as the rest of the range.


      Visit and tasting

      These products can be discovered on site in Saint Jean Le Vieux, during a tour of the drying facility followed by a complimentary tasting. Appointments can be made by calling 05.59.37.10.02. (No. 2)


      Dear food lover,

      The Basque Country isn't defined by a single product, and neither is ours. There's ham, of course, but also sausage, still crafted with care, chorizo with its distinctive character, and preserves simmering like homemade preserves. A single thread runs through the entire range: time and a know-how passed down through generations.
