  It is in their house that Sylvie and Éric MAYTÉ invite you, after the visit, to taste their different hams: Bayonne, Ibaïama, sow ham, local ham.
  
  You will also appreciate other products from Mayté: sausages, Basque berets, bonetas, chorizos...
  
  Maison Mayté offers a wide choice of preserves: Basque pâté, confit sausage, country pâté.
  As well as a variety of cooked dishes: such as axoa, piperade, beef bourguignon...

It's always a pleasure to shop at Mayté's. Their shop, completely renovated a few years ago, is very attractive, well-integrated, and showcases their products beautifully. As long-established charcuterie makers in the region, their preserves are their strongest asset (the Basque pâté at €2.55 is excellent and is just the entry-level option), but missing out on the Basque beret with tomato and basil would be a crime. As for fresh charcuterie, I confess a real weakness for the dried lomo and shoulder ham, while the butcher's counter is also very good (especially the xistoras and sausages). The cuts of Aquitaine beef have always been perfect on the grill! The selection of hams available is also very appealing, starting with the reasonably priced Bayonne ham, although the sow's ham and higher-quality hams are significantly more expensive. There's one mistake you shouldn't make more than twice when you're in the region: buying Serrano ham and meat at the Ventas (local restaurants) whose unbeatable prices absolutely don't compensate for the disastrous taste of the products. Mayté and Gastellou, on the other hand, are delicious above all else!
