The Basque cake has been a staple of the Arraya house since its creation in 1951. Sébastien FAGOAGA has succeeded his father, Paul Fagoaga, since the 2000s and he is the only one to hold the secret recipe for this emblematic specialty of Basque cuisine. The choice of raw materials is essential, so we offer a 100% pure butter cake and our homemade cream is made with milk from the "Oreka" cheese dairy in Sare. Let's not forget the little shortbread cookies made from the same dough (ideal with a tea and with the homemade jam from Boutique Arraya).
