This grand 16th-century Labourd house, nestled in the heart of a large garden bordered by a river, is located in Sare, one of the most beautiful villages in France and the Basque Country. Whether you're stopping for a meal in our restaurant or a longer stay in our guest rooms, you can enjoy the peace and hospitality of this place.

Admit it, you weren't expecting this when you stepped into a 16th-century Basque farmhouse! It's hard to call it a "restaurant." It's more like a succession of atmospheres, of cozy nooks. The English-style decor, meticulously crafted, is composed of pieces brought back from England by Jean and Guillaume's parents, creating a truly surprising and utterly charming effect. Depending on the moment and your mood, you might prefer to enjoy tea with a book by the fireplace, have lunch on the library balcony, or in the old kitchen... The result is a series of different and ever-changing pleasures.

“We wanted to maintain the homey feel,” explains Jean Fagoaga, “that of a family table where people enjoy gathering to savor what has been prepared for them.” On the plate, you’ll find primarily garden-fresh, seasonal vegetables. It doesn’t get any fresher than this: they’re picked that very morning! The rest comes from local, organic producers, and the seafood comes from the Saint-Jean-de-Luz fish market.
So, the ripeness and quality of the available produce dictate the daily menu. "It would probably be simpler to have a seasonal menu that lasts for two months," Guillaume jokes. "But here, that's how it is: the garden decides." You couldn't get more home-style cooking: even the manure used for the vegetables comes from their brother Emmanuel's equestrian center!
