In this small chocolate shop on Rue de la Salie in Bayonne (a historic chocolate city for 400 years), the emphasis is on the origin of the cocoa beans. In partnership with the Etiquable cooperative, Virginie and her team offer creations made with organic cocoa beans from clearly identified and certified plantations and growers (Peru, Madagascar, Haiti, Guatemala, etc.).

Located on the ground floor of a late 15th-century half-timbered building, you can watch Virginie or her son Benoit making and molding chocolate. Here, there are no large workshops or heavy machinery, just a bain-marie and stainless steel vats for tempering the chocolates and creating playful collections that follow the seasons.

The most popular creations? Chocolates with Espelette pepper, " Little Pig of Bayonne " bars, or RUBY chocolate. But handmade means limited quantities… So, remember to order.

And to cool down, what could be better than a delicious ice cream ? Sorbets, ice creams, Italian-style or in a scoop, in a cup or a cone, there's something for everyone.
