At Pierre Ibaialde, the taste for tradition is perpetuated through a range of homemade preserves, prepared in the workshop in Bayonne. Each recipe is prepared with carefully selected ingredients and cooked using traditional Basque methods.
Homemade preserves
Discover all the tastes of the Basque Country in a selection of authentic preserves, ready to taste:
- Traditional cooked dishes (Piperade, AXOA, Garbure)
- Canned duck (2 confit legs, confit sleeves, duck pâté, duck pâté with Espelette pepper puree, confit gizzards)
- Canned pork (pork confit, shank, candied sausage, country pâté, black pudding with Espelette pepper puree, liver pâté with Armagnac)
All products are available at the workshop shop and on the website.

Take a guided tour of the workshop in Bayonne to discover the secrets of making their famous ham: from pig breeding to curing.
You can also explore:
- the curing room with more than 800 hanging hams
- the traditional salting tub
- the dryer where the products take the time to refine.
The 45-minute tour ends with a tasting of the house's signature products.
